Prepare these nopal cakes with cheese, made with ham, and accompanied by a guajillo and morita chili sauce.

Blend the tomato, guajillo chili, morita chili, onion, garlic, cumin, fresh cilantro, the mix of dried herbs, and chicken broth. Add the sauce to a pot with hot oil and cook for 5 minutes. Beat the egg whites and yolks separately to make the batter. Take a slice of ham, a slice of cheese, and place them between 2 whole nopales like a sandwich. Secure well with wooden toothpicks. Coat the stuffed nopales in flour and then in the batter. Cook the battered nopales in a skillet with hot oil over medium heat on both sides until they are nicely browned, but not burnt. Remove from heat and remove excess oil with the help of a paper towel. Serve the battered nopales with the sauce and garnish with fresh cilantro.
