Nopal Tinga Tostadas

This dish is perfect for keeping your figure and for a meatless Monday as it contains no animal products; it is a delicious and original nopal tinga made with tomato sauce, onion, and carrot, served on tostadas with beans.

  • 3 cups nopal, cut into strips
  • 1 tablespoon salt
  • 1 teaspoon baking soda
  • water
  • 6 tomatoes
  • 2 cloves garlic
  • 1/4 cups vegetable broth
  • 1 tablespoon vegetable oil
  • 1/2 onions, sliced
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 cup carrot, shredded
  • 8 tostadas
  • 1 cup beans
  • avocado, sliced for garnish

  • In a pot of boiling water, cook the nopales with salt and baking soda until tender. Drain and set aside.
  • For the sauce, blend the tomatoes with garlic, chipotle pepper, and vegetable broth.
  • In a deep skillet, sauté the onion in oil, add the sauce, oregano, salt, pepper, and cook for 15 minutes. Incorporate the nopales, carrot, and cook for 5 more minutes. Adjust seasoning.
  • Serve the tinga on corn tostadas with beans and garnish with avocado.
