Nopal Wrapped with Chicken Breast

  • 1/2 packages Virginia Zwan® turkey breast, for the filling (250 g per package)
  • 2 tablespoons olive oil, for the filling
  • 1/2 cups red onion, finely chopped, for the filling
  • 1 tablespoon garlic, finely chopped, for the filling
  • 2 cups cherry tomato, in halves, for the filling
  • 1/4 cups serrano chile, finely chopped, for the filling
  • 1 tablespoon oregano, for the filling
  • 1/4 cups epazote, finely chopped, for the filling
  • 1 cup Zwan® panela cheese, in medium cubes, for the filling

Low
  • On a cutting board, cut the Virginia Zwan® Turkey Breast into small cubes.
  • In a hot skillet, pour the olive oil and lightly cook the red onion and garlic until they become shiny. Add the cherry tomatoes, serrano pepper, oregano, epazote, Zwan® panela cheese, and diced Virginia Zwan® Turkey Breast, season with salt and pepper, mix, and cook for 5 minutes over medium heat. Remove from heat and set aside.
  • On a large sheet of aluminum foil, pour a little olive oil, place a piece of nopal, spread a tablespoon of refried pinto beans on the nopal, and add the filling mixture on top, cover the nopal with the aluminum foil sheet and close it making sure there are no openings. Repeat until all the nopales are used.
  • Place the nopales on a hot griddle and cook for 15 minutes over medium-low heat. Once the time has elapsed, break open the aluminum foil and serve the nopal accompanied by fried chiles and white rice.
