Nopales Aztec Cake with Cheese

  • 15 nopales
  • 1 tablespoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups celery, finely chopped
  • 1/2 cups carrot, in small cubes
  • 1/2 cups pumpkin, in small cubes
  • 1/2 cups chayote, in small cubes
  • 3 cups chicken, cooked and shredded
  • 2 teaspoons oregano
  • 1 cup tomato purée
  • salt
  • pepper
  • 1 cup Zwan® Reduced Fat Sliced Panela Cheese
  • 1/2 cups Zwan® manchego Cheese
  • fresh oregano, for decoration
  • brown rice, for accompaniment

  • On a griddle, roast the nopales on both sides for about 15 minutes.
  • In a skillet, cook the onion, garlic, celery, carrot, zucchini, chayote, shredded chicken, oregano, tomato puree, salt, and pepper in a little vegetable oil over medium heat until the vegetables soften (about 15 minutes).
  • In a baking dish, place a layer of nopales, followed by the chicken filling and reduced-fat sliced Queso Panela Zwan®; repeat this process until the baking dish is full, sprinkle with Queso Manchego Zwan®, and bake for 10 minutes or until the cheese is melted.
  • Serve, decorate with fresh oregano, and accompany with brown rice.
