Northern Burritos

  • 2 tablespoons vegetable oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup tomato, in medium cubes
  • 2 serrano chiles, in slices
  • 600 grams beef tenderloin Tampiqueña strip, in cubes

  • 1 cup asadero cheese, grated
  • 4 flour tortillas, for burritos, hot
  • 1 cup San Marcos® Black Refried Beans, to accompany
  • 1/2 cups guacamole sauce, to accompany
  • San Marcos® Chipotle Mayonnaise Dressing, to accompany
  • Mustard Prepared with chipotle San Marcos®, to accompany

  • Sauté the onion in a pan with hot vegetable oil and garlic over medium heat until they become shiny, add the tomato and cook for 2 minutes. Incorporate the serrano chili and the tampiqueña meat in cubes; season with salt and pepper. Lower the heat and cook for 8 minutes, stirring constantly. Remove from heat.
  • Place the asadero cheese to gratin in a hot comal or pan, and once a crust begins to form, cover with the flour tortilla for burritos. Flip so that the cheese crust is on top of the tortilla.
  • Spread the San Marcos® Black Refried Beans to taste, add the tampiqueña mixture and guacamole. Close the burrito like an envelope.
  • Cut in half and serve with San Marcos® Chipotle mayonnaise dressing and San Marcos® Prepared Mustard with Chipotle to taste. Enjoy hot!
