Sauté the onion in a pan with hot vegetable oil and garlic over medium heat until they become shiny, add the tomato and cook for 2 minutes. Incorporate the serrano chili and the tampiqueña meat in cubes; season with salt and pepper. Lower the heat and cook for 8 minutes, stirring constantly. Remove from heat. Place the asadero cheese to gratin in a hot comal or pan, and once a crust begins to form, cover with the flour tortilla for burritos. Flip so that the cheese crust is on top of the tortilla.
