Onion Tinga Tostadas

This recipe is an excellent option for people who don't eat meat or want to increase their vegetable intake without sacrificing flavor. Onion tinga is delicious and can be enjoyed with tostadas.

  • 4 tomatoes
  • 1 clove garlic
  • 1 cube Knorr Tomate® tomato bouillon
  • 2 tablespoons vegetable oil
  • 1 kilo white onion, sliced
  • 1 teaspoon oregano
  • 1 can chipotle chile in adobo sauce, chopped
  • 12 corn tortillas, baked
  • 1 1/2 cups black beans, refried

  • Boil the tomatoes until soft, then blend them with garlic, the Knorr Tomato® seasoning cube, and one cup of the cooking liquid.
  • Heat the oil in a pot and sauté the onion over low heat until softened and slightly browned.
  • Pour in the blended tomato and let it cook over low heat for 5 minutes. Add the oregano, the chipotles, and cook for 3 more minutes.
  • Spread some beans on each tostada and place some onion tinga on top. Serve.
