Pasta with chipotle, avocado, and mango

  • 1 1/2 cups olive oil, for the chipotle and honey dressing
  • 1/2 cups red wine vinegar, for the chipotle and honey dressing
  • 3 tablespoons honey, for the chipotle and honey dressing
  • 1 tablespoon lime juice, for the chipotle and honey dressing
  • 3 tablespoons chipotle chile in adobo sauce, ground, for the chipotle and honey dressing
  • 1 tablespoon garlic powder, for the chipotle and honey dressing
  • 1 tablespoon oregano, for the chipotle and honey dressing
  • 1/2 tablespoons cumin powder, for the chipotle and honey dressing
  • salt, for the chipotle and honey dressing
  • pepper, for the chipotle and honey dressing
  • 1 cup yellow corn kernels
  • 1 cup cherry tomato, in half
  • 3/4 cups persian cucumber, in half-moons
  • 1 cup avocado, in medium cubes
  • 1 1/2 cups mango, in medium cubes
  • 1/4 cups peppermint, finely chopped

  • Boil water with salt in a pot, add the De Luigi® Rotini pasta, and cook for 9 minutes or until well cooked. Drain and set aside.
  • For the dressing: in a bowl, mix the olive oil, red wine vinegar, honey, lemon juice, chipotle peppers, garlic powder, oregano, cumin, salt, and pepper with a whisk until the dressing is well combined. Set aside.
  • Mix the corn kernels, cherry tomatoes, Persian cucumbers, avocado, mango, mint, and De Luigi® Rotini pasta in a bowl. Serve the pasta with chipotle, avocado, and mango in a serving bowl and accompany with the dressing.
