Pear and Cheese Quiche

  • For the tart base, mix the flour, butter, egg, and salt in a processor for 5 minutes, or until you achieve a homogeneous consistency. Roll out the dough to 3 mm thick and place it in a tart pan. Refrigerate and set aside.
  • For the filling, in a small pot over medium heat, heat the oil and sauté the onion until soft, add the sugar and caramelize for 2 minutes, then pour in the red wine, add the rosemary, and cook for 5 more minutes. Let it cool and set aside.
  • In a bowl, mix the eggs with the manchego cheese, roquefort cheese, goat cheese, cream, add the caramelized onion, season with salt and pepper.
  • Pour the previous preparation over the tart dough, add the pears, season with a pinch of cardamom and pepper, and add the butter cubes.
  • Bake the tart at 180 °C for 40 minutes.
  • Let it cool a bit before serving.
