For the tart base, mix the flour, butter, egg, and salt in a processor for 5 minutes, or until you achieve a homogeneous consistency. Roll out the dough to 3 mm thick and place it in a tart pan. Refrigerate and set aside.
For the filling, in a small pot over medium heat, heat the oil and sauté the onion until soft, add the sugar and caramelize for 2 minutes, then pour in the red wine, add the rosemary, and cook for 5 more minutes. Let it cool and set aside.
In a bowl, mix the eggs with the manchego cheese, roquefort cheese, goat cheese, cream, add the caramelized onion, season with salt and pepper.
Pour the previous preparation over the tart dough, add the pears, season with a pinch of cardamom and pepper, and add the butter cubes.
Bake the tart at 180 °C for 40 minutes.
