Pepperoni Pizza with Cheese Crust

  • 5 cups flour, 600 g
  • 10 grams dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 cup water, warm
  • 1 tablespoon oregano
  • 4 tablespoons olive oil, 40 ml

  • 15 Mozzarella cheese, in sticks
  • 1 cup tomato sauce
  • 2 cups cheese, manchego and cheddar

  • Preheat the oven to 180° C
  • On a clean surface, form a volcano with the flour and add the yeast, sugar, salt, water in the center and mix a little until integrated. Add the oregano, olive oil and work until integrated.
  • With the help of your hands, knead until you have a smooth and elastic dough.
  • In a previously greased bowl, place the dough and let it ferment until it doubles in size.
  • On a floured surface, roll out the dough, measure the baking tray you will use and cut the dough a little larger than its size (about 2 cm). Place the mozzarella cheese sticks at the edges and cover them with the dough. Pinch the ends together lightly to seal.
  • Pour a bit of sauce, add the cheese mixture, the pepperoni, brush the edge with olive oil, and bake for 15 minutes or until cooked.
  • Cut a slice and serve.
