  • 1/2 onions
  • 2 cloves garlic
  • 4 tomatoes, half
  • 4 guajillo chiles, seedless
  • 3 cloves
  • 4 black peppercorns
  • 1/4 cinnamon sticks
  • 2 cups vegetable broth

  • 1 kilo pork ribs
  • salt and pepper
  • 2 cups potato, in medium cubes
  • refried beans
  • Mexican red rice

  • Roast the onion, garlic, tomatoes, guajillo chiles, cloves, pepper, and cinnamon for 3 minutes or until everything is well charred.
  • Blend the charred ingredients with the vegetable broth, salt, and pepper until you obtain a well-integrated sauce. Set aside.
  • Heat the lard in a pot and sauté the ribs for 5 minutes or until they start to look golden. Pour in the sauce and cook for 30 minutes or until the ribs are well cooked. Add the potatoes and cook for 5 more minutes.
  • Serve the pork ribs in red sauce and accompany with beans, rice, and tortillas.
