Potato Pancakes with Cheese

Prepare these delicious potato pancakes, filled with Chihuahua cheese, perfect for the whole family. You won’t need much time to treat your loved ones!

  • water
  • 3 potatoes, peeled
  • salt
  • 1 egg
  • 1/4 cups breadcrumbs
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup Chihuahua cheese, cut into thin cubes
  • vegetable oil, for frying
  • parsley, finely chopped, for sprinkling

  • In a pot of boiling water, add the potatoes, salt, and cook for 25 minutes until soft.
  • Remove from the pot, peel and mash with the help of a ladle; it’s easier if you do it while they are hot.
  • In a bowl, mix the potatoes, egg, breadcrumbs, cornstarch, and season with salt.
  • Shape the pancakes with your hand and create a hollow, add the Chihuahua cheese and wrap it with the pancake.
  • Heat enough oil in a pot over medium heat to fry the pancakes, the oil should cover the pancakes at least ¾ of the thickness; cook each pancake for approximately 8 minutes.
  • Drain excess oil, serve, and sprinkle with chopped parsley.
