Potato Patties with Chorizo

  • 3 potatoes, peeled and cut into medium cubes

  • 1 cup chorizo, cut into small cubes
  • 2 tablespoons butter, melted, for the potato
  • 1/4 onions, finely chopped, for the potato
  • 1 tablespoon garlic, finely chopped, for the potato
  • 4 tablespoons breadcrumbs, for the potato
  • 1/4 cups cornstarch, for the potato
  • 1 egg, for the potato
  • salt, for the potato
  • pepper, for the potato
  • 2 eggs, for the egg
  • 1/4 cups milk, for the egg
  • 1 cup flour, for coating
  • 1 cup breadcrumbs, for coating
  • vegetable oil, for frying the patties
  • cilantro leaves, for garnish
  • green salsa, for garnish

  • In a pot with hot water, cook the potato for 25 minutes or until soft and season with salt. Drain and set aside.
  • In a skillet, fry the chorizo for 5 minutes or until golden over medium heat. Place on a plate with paper towels and set aside.
  • In a bowl, add the potatoes with the melted butter and mash until smooth. Add the onion, garlic, breadcrumbs, cornstarch, egg, fried chorizo, season with salt and pepper, and mix until everything is combined. Once the mixture is combined, shape the patties with your hands.
  • Mix the egg with the milk on a plate. Place the flour and breadcrumbs on separate flat plates. Dredge the patties first in the flour, then in the egg (with milk), and finally in the breadcrumbs.
  • In a skillet with enough hot oil, fry the patties for 5 minutes over medium-low heat until golden brown.
  • Serve on a flat plate and garnish with green sauce and cilantro leaves.
