  • 5 tomatillos, cooked, for the green sauce
  • 3 serrano chiles, cooked, for the green sauce
  • 1 clove garlic, for the green sauce
  • 1/4 onions, for the green sauce
  • 1/4 bunches cilantro, for the green sauce
  • salt, for the green sauce
  • 3 tomatoes, roasted, for the red sauce
  • 4 morita chiles, soaked, for the red sauce
  • 1 clove garlic, grilled, for the red sauce
  • 1/4 onions, grilled, for the red sauce
  • lard, for the chalupas
  • 15 tortillas
  • onion, finely chopped, for the chalupas
  • 2 cups beef, cooked and shredded
  • queso fresco, for the chalupas

  • For the green sauce: blend the tomatoes, serrano chiles, garlic, onion, cilantro, and salt. Set aside.
  • For the red sauce: blend the tomato, morita chili, garlic, onion, and salt. Set aside.
  • Place the tortillas on a griddle over medium heat, add a little lard, flip, and lightly brown for 3 minutes. Add sauce, shredded meat, onion, and cheese.
  • Serve the Poblano chalupas accompanied by a refreshing drink.
