Ricotta and Bacon Croquettes

This ricotta and bacon croquette recipe is a true delight in flavor, thanks to the texture provided by Bionda® ricotta and the touch of bacon; moreover, the breading will make them even more delicious.

  • 1 package Bionda® cottage cheese, 500 g
  • 4 tablespoons flour
  • 1/2 cups spinach, finely chopped
  • 1 cup bacon, finely chopped
  • 1/2 cups onion, finely chopped, sautéed
  • salt
  • pepper
  • 2 eggs, shake
  • 2 cups breadcrumbs
  • vegetable oil
  • salad, for serving

  • Add the Bionda® Ricotta, flour, spinach, bacon, onion, salt, and pepper to a bowl. Mix well.
  • Start forming small balls with your hands; you can apply a little oil to avoid the croquette mixture sticking and make it easier to handle. Repeat this step until the mixture is finished.
  • Dip the ricotta croquettes in the egg and then in the breadcrumbs. Set aside.
  • Heat enough oil in a saucepan and fry the ricotta croquettes for 5 minutes or until the breading is slightly golden.
  • Place the ricotta and bacon croquettes on a plate and serve with salad.
