Salami Stromboli

Try this delicious Salami Stromboli, a typical pizza from Italian-American cuisine. This stromboli is very similar to other classics like calzone pizza or focaccia. The rich flavor of salami with the crispy pizza dough makes stromboli an irresistible combination.

  • 2 cups flour, for the dough
  • 1 teaspoon salt, for the dough
  • 7 grams dry yeast, for the dough
  • 1 tablespoon olive oil, for the dough
  • 1 cup water, warm, for the dough
  • extra virgin olive oil, for greasing
  • 1 cup salami, in thin slices
  • 1 cup Mozzarella cheese, grated
  • 1 cup chorizo, fried, or chorizo, in small pieces
  • 1/2 cups tomato sauce
  • 5 cups vegetable oil, for frying
  • 1 cup arugula, for garnish

  • In a bowl, mix the flour, salt, yeast, and olive oil. Gradually add the water and incorporate. Knead until you have a firm and smooth consistency.
  • Gather the dough with your hands to form a ball. Place it in a greased bowl with oil and cover with a cloth. Let it rest until it doubles in size.
  • Using your hands, remove the excess air from the dough. On a floured surface, roll out the dough into a rectangle.
  • Cover with tomato sauce, mozzarella cheese, fried chorizo or chistorra, and close it so that the ingredients remain inside the rectangle. It is very important to seal the stromboli well so that when frying, the ingredients do not spill out.
  • In a saucepan over medium heat, heat the oil and fry the stromboli; turn it on both sides, making sure the oil is not too hot so that the dough cooks well and does not remain raw inside.
  • Place on absorbent paper to remove excess oil.
  • Garnish with fresh arugula and serve.
