Lettuce Tacos with Salmon

  • 1 cup peach jam
  • 1/4 cups chipotle chile
  • garlic salt
  • pepper
  • 2 salmon fillet
  • 1 Sweet Crunchy Eva® Hydroponic Lettuce
  • 1/4 cups red onion, in strips, for garnish
  • 1/4 cups chives, finely chopped

  • Mix the peach jam, chipotle, garlic salt, and pepper in a bowl. Set aside.
  • Place the salmon on a previously greased baking sheet and brush with the peach jam mixture. Bake the fish at 180 °C for 5 minutes or until it changes color. Set aside.
  • Cut the salmon into cubes and place on a leaf of Hydroponic Sweet Crunchy® Lettuce.
  • Decorate the lettuce tacos with slices of avocado, red onion, and scallions, and drizzle with the peach sauce.
