Orange Salmon

  • 2 oranges
  • 1/2 cups butter, melted
  • 1/4 cups ground chipotle chile
  • 1/2 cups honey
  • 1 tablespoon olive oil
  • 600 grams salmon, in fillet and skinless
  • parsley, for decoration

  • On a cutting board, zest one of the oranges and cut it into half-moons. Squeeze the other one to extract the juice and set it aside.
  • In a bowl, mix the butter with the orange juice, orange zest, ground chipotle, and honey.
  • Cook the salmon, previously seasoned with salt and pepper, in a skillet with olive oil, and pour in the previous mixture, constantly brushing and continuing to cook until done. At ¾ of the cooking time, add the orange half-moons, reserving some for decoration.
  • Serve, decorate with orange and parsley leaves.
