Sausage Skewers

This sausage skewer recipe will delight everyone and can be for a day at home or a family gathering; it is full of flavor. It is ideal for treating your family, a very quick and practical recipe that will please both adults and children.

  • 1 tablespoon vegetable oil
  • 1/2 cups chorizo, shredded
  • 1/2 cups bacon, in small cubes
  • 1/2 cups onion, in strips
  • 2 tablespoons garlic, finely chopped
  • 1/2 cups red bell pepper, in strips
  • 1/2 cups green bell pepper, in strips
  • 2 cups sausages, in thick slices
  • 1 cup Manchego cheese
  • 2 avocados, without skin, for the guacamole
  • 1 cucumber, for the guacamole
  • 1/4 cups cilantro, for the guacamole
  • 3 serrano chiles, for the guacamole
  • 1/2 cups lime juice, for the guacamole
  • tortillas, to accompany

  • In a skillet, heat the oil and fry the chorizo, frying for 5 minutes or until golden, remove from the skillet and set aside.
  • Add the bacon and onion, garlic, and sauté for 5 minutes until golden, add the red bell pepper, green bell pepper, and sauté for 5 minutes.
  • Season with salt, pepper, and add the sausages, frying until golden. Add the cheese and cover to let it melt.
  • For the guacamole, blend the avocados, cucumber, serrano chili, lime juice, and season with salt. Set aside.
  • Serve on a plate and garnish with cilantro leaves.
