If you like ceviches, this one definitely beats them all. A Peruvian ceviche with octopus, shrimp, and fish cooked in a delicious marinade of lemon and chili that makes it very special and colorful.

1 cup octopus, cooked, diced
1 cup shrimp, small, cleaned and shelled
1 cup fish steak, of sierra fish cut into cubes
1/2 red onions, finely chopped
3 guajillo chiles, finely chopped
1 cup corn kernels, cooked
1 cup lime juice
1/2 cups olive oil
1 teaspoon salt
1 teaspoon pepper
1 sweet potato, cooked and diced
1 tablespoon fresh cilantro, finely chopped
1 lime, sliced, for decoration

In a large bowl, mix the octopus, shrimp, fish fillet, red onion, guajillo chili, and corn.
Add the lemon juice, olive oil, salt, and pepper and mix very well.
Cover and let marinate in the refrigerator for 45 minutes.
Add the sweet potato and cilantro.
Serve and decorate with lemon slices.
