Shrimp Cakes

This delicious dish of shrimp cakes in tomato broth is perfect for Lent, they are very easy to prepare and taste delicious. They are a great option for seafood lovers.

  • 250 grams dried shrimp
  • 50 grams fava beans, ground
  • 5 eggs
  • 5 tomatoes
  • 5 nopales
  • 1 sprig fresh cilantro
  • 1/4 cups onion
  • 1 clove garlic
  • salt and pepper
  • 200 milliliters vegetable oil

  • Place the shrimp in a skillet to toast for 4 minutes and remove from heat, then grind in a blender until it becomes a powder and mix with the ground beans.
  • Clean the nopales and chop them into small squares, then cook them in a pressure cooker for about 15 minutes with little water and a pinch of salt; after the time, drain the nopales and reserve them in a saucepan.
  • Beat the egg whites until they reach stiff peaks, then add the yolks and continue beating.
  • Add the shrimp and ground beans to the egg and stir until you have a homogeneous mixture.
  • Heat a skillet with oil. After a few minutes, use a spoon to take some of the shrimp mixture and place it in the skillet to fry, continuing this process until all the mixture is used up, then place the cakes on paper towels to remove excess oil.
  • Wash the tomatoes and blend them with the onion and garlic, then cook over medium heat for about 10 minutes; once it boils, add the nopales and shrimp cakes. Let cook for another 10 minutes, then remove from heat and serve.
