Shrimp Quesadillas

  • 1 tablespoon butter, in small cubes
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 1/2 cups tomato, in small cubes, seedless
  • 1/4 cups serrano chile, seedless, finely chopped
  • 3 cups medium-sized shrimp, in medium cubes
  • salt, for the filling

  • 4 cups corn masa flour, for the dough
  • 1 cup wheat flour, for the dough
  • 1/2 cups vegetable oil, for the dough
  • 1 teaspoon baking powder, for the dough

  • 2 cups Manchego cheese, for the filling

  • Melt the butter in a skillet over medium heat, add the onion, garlic, tomato, and chili, and cook for 3 minutes. Incorporate the shrimp, season with salt and pepper, and cook for 5 minutes. Remove and let cool.
  • For the dough: Mix the corn flour, wheat flour, vegetable oil, baking powder, salt, and water gradually, kneading with your hands. To confirm that your dough is ready, form a ball, flatten it with your hand, and if it doesn't crack, the dough is ready.
  • Use a tortilla press to make tortillas 5 cm to 7 cm in size. Fill with 2 tablespoons of filling and a little manchego cheese, then seal well.
  • Fry the shrimp quesadillas in a pot with enough oil over medium-high heat for 5 to 8 minutes or until golden brown. Remove and place on a plate lined with paper towels.
  • Serve the quesadillas on a plate, accompany with chipotle sauce, lemon, and enjoy with Sidral Mundet® Apple-Peach flavor.
