Stuffed Potatoes with Shrimp

  • 2 guajillo chiles, soaked and deveined
  • 1 bottle Salsa Huichol® hot sauce
  • 1 cup cream cheese
  • 1/2 cups onion
  • 1 tablespoon garlic
  • 2 tablespoons butter
  • 2 cups shrimp, clean and peeled
  • 1 cup Manchego cheese, shredded
  • Manchego cheese, shredded, for gratin
  • leek, fried, for decoration
  • cilantro, for decoration

  • Preheat the oven to 200 °C.
  • Spread a sheet of aluminum foil with butter, then place a potato, add salt and pepper, and wrap. Bake at 200 °C for 25 minutes and set aside.
  • Blend the guajillo chili, Salsa Huichol® Spicy, cream cheese, onion, and garlic. Set aside.
  • Scoop out the potato with a spoon and set the potato aside.
  • Heat the butter in a skillet over medium heat, add the sauce and cook for 5 minutes, then add the shrimp and cook for 5 more minutes. Finally, add the reserved potato, cheese, and remove from heat.
  • Place the potatoes in a cast iron skillet, fill with the previous preparation, and gratin for 2 minutes.
  • Serve the stuffed potatoes with shrimp accompanied by fried leek and garnish with cilantro.
