Steak and Longaniza Pambazo

  • 8 guajillo chiles, cleaned, deveined, and soaked in hot water
  • 2 cloves garlic
  • 1/4 white onions
  • 1 pinch salt
  • lard
  • 1/2 cups longaniza, chopped
  • 1/4 cups white onion, finely chopped
  • 1 cup beefsteak, chopped
  • 4 pambazo rolls
  • lettuce, finely chopped, for serving
  • queso fresco, crumbled, for serving
  • sour cream, for serving
  • green salsa, raw, for serving

  • For the marinade, blend the chiles with a little of the soaking water, garlic, onion, and a little salt until you achieve a smooth marinade.
  • Fry the marinade with a little lard in a pot over medium heat for about 5 minutes, adjust seasoning and set aside.
  • For the filling, heat a skillet over medium heat and cook the longaniza until it releases its fat. Add the onion and steak, cook until the meat is done and season with salt and pepper.
  • Cut the breads in half and dip them in the marinade. Lightly fry on a griddle with a little lard until golden brown. Stuff them with the steak filling and serve with lettuce, fresh cheese, sour cream, and raw green sauce.
