Stuffed Chayotes with Gratinated Quinoa

  • 1 cup Goya® tricolor quinoa
  • 1 1/2 cups water

  • 1 cup deli ham, cut into small cubes
  • 1/2 cups corn kernels
  • 1/4 cups sour cream
  • 2 tablespoons mayonnaise
  • 1/4 cups Mozzarella cheese
  • 2 chayotes, cooked
  • salt

  • In a pot with water, cook the Goya® tricolor quinoa with salt and covered for 20 minutes. Set aside.
  • Cut the chayotes in half and use a spoon to remove the filling, then cut it into small cubes and set aside.
  • In a bowl, mix the Goya® tricolor quinoa with the ham, corn, cream, mayonnaise, the chayote filling cut into small cubes, salt, and pepper.
  • Fill the chayotes with the Goya® tricolor quinoa mixture and cover with mozzarella cheese. Bake to gratin at 180 °C for 10 minutes.
  • Serve on a wide plate and decorate with finely chopped cilantro, accompany with your favorite drink.
