Stuffed Potatoes with Meat and Guacamole

These stuffed potatoes with meat and guacamole are made with ground meat and the special touch of Herdez® Spicy Guacamole Sauce, giving them a creamy texture and a spicy flavor. Plus, these stuffed potatoes are perfect for making at a gathering.

  • Place each potato on an extended sheet of aluminum foil, then pour in a little vegetable oil and salt, and wrap the potatoes.
  • Bake for approximately 20 minutes at 200 °C or until the potatoes are completely cooked. Remove from the oven and let cool slightly at room temperature.
  • Cut the potatoes in half lengthwise, and using a spoon, remove part of the filling, leaving the skins with 1 cm of flesh. Save the flesh for use in other preparations.
  • Heat a skillet over medium heat, then pour in some vegetable oil, add the onion and garlic, and sauté for 3 minutes. Next, add the ground meat and season with salt and pepper, and finally, pour in the Herdez® Spicy Guacamole Sauce and cook for 8 minutes or until the liquid has almost completely evaporated.
  • Fill the potato skins with the meat, place them on a baking sheet, and add grated Manchego cheese.
  • Broil the stuffed potatoes with meat in the oven for about 5 minutes at 200 °C.
  • Serve the stuffed potatoes with Herdez® Spicy Guacamole Sauce and sprinkle with chopped cilantro.
