Stuffed Quesadillas with Zucchini Flowers

Try this delicious recipe for stuffed quesadillas with zucchini flowers; they are tasty and ideal for a meal at home, plus they are very easy to prepare.

  • 4 teaspoons Knorr® granulated chicken bouillon
  • 2 cups zucchini blossoms, clean
  • 1/2 cups red onion, cut into thin strips
  • 2 cloves garlic
  • 4 teaspoons Primavera Light® unsalted margarine
  • 8 tortillas, hot
  • 4 tomatillos, clean and cut into quarters
  • 1/4 cups white onion, cut into medium cubes
  • 1 árbol chile
  • 1 cup water

  • For the filling, in a skillet over medium heat, melt 3 teaspoons of Margarina Primavera Light® No Salt and sauté the white onion along with a finely chopped garlic clove.
  • Add the zucchini flowers and 1 teaspoon of Knorr® Suiza Chicken Broth. Mix everything well and cook for a few minutes, stirring constantly until the flower is cooked and soft.
  • For the sauce, blend the tomato, garlic clove, onion, and 3 teaspoons of Knorr® Suiza Chicken Broth perfectly. In a small pot over medium heat, melt the remaining teaspoon of Margarina Primavera Light® No Salt, pour in the sauce to sauté and boil for a few minutes.
  • Form the quesadillas with the tortillas and the zucchini flower filling. Cover with the sauce and serve immediately.
