Sweet and Sour Cauliflower

This delicious and healthy dish will delight both kids and adults; try cauliflower in a different way, coated with a sweet and sour sauce that balances the flavors and textures of this dish very well.

  • 1/3 cups corn masa flour
  • 1/2 cups wheat flour
  • 1 cup water
  • 3 tablespoons chile flakes
  • 2 cups cauliflower, cooked
  • 1 cup flour
  • 2 cups vegetable oil, for frying
  • 5 tablespoons maple syrup, for the sauce
  • 4 tablespoons ketchup, for the sauce
  • 5 tablespoons pineapple juice, for the sauce
  • 3 tablespoons balsamic vinegar, for the sauce
  • 1 tablespoon cornstarch, for the sauce
  • 1 pinch salt
  • 1 pinch pepper
  • 2 cups rice, fried, oriental style, for accompaniment
  • black sesame seeds, for garnish

  • In a bowl, mix corn flour with wheat flour and water; add the chili flakes, season with salt and pepper; mix until well combined.
  • Dust the cauliflower with flour and dip it into the previous preparation.
  • Heat the oil in a pot over medium heat, fry the cauliflower, and place it on paper towels to remove excess fat.
  • For the sweet and sour sauce, in a pot over medium heat, heat the maple syrup with ketchup, pineapple juice, balsamic vinegar, and cornstarch, and cook for 5 minutes until you have a thick sauce, season to your liking and set aside.
  • In a bowl, place the cauliflower preparation, drizzle with sweet and sour sauce, and add a bit of sesame seeds.
  • Serve the cauliflower on a bed of fried rice, accompany with the sauce, and garnish with sesame seeds.
