Tex Mex Lasagna

  • Preheat the oven to 180°C.
  • In a skillet, heat the oil over medium heat and cook the onion, garlic, bell pepper, tomato, and corn for about 10 minutes.
  • Add the ground beef, season with salt and pepper, and cook until browned, then add chili powder, paprika, cumin, sugar, thyme, and tomato puree. Cook for about 10 more minutes.
  • Add the black beans, beef broth, and cook for 40 minutes on low heat. Adjust seasoning.
  • Trim the tortillas with a knife so they fit well in the baking dish and fry in hot oil until golden. Drain on paper towels.
  • In a baking dish, layer tortillas and add some meat, cheeses, and repeat the process until the dish is filled.
  • Bake for 15 minutes or until the cheeses are completely melted. Serve.
