Three Cheese Vegetarian Grill

This dish is made up of delicious grilled vegetables, accompanied by a smoky lemon dressing and 3 different types of cheese. This easy recipe has a light, slightly smoky, fresh flavor and is very easy to prepare, ideal for hot days when you want to make something quick and delicious.

  • 1 Eva® trio lettuce
  • ghee, to brush the vegetables
  • 1 red onion, in large cubes
  • 1 1/2 cups cherry tomato
  • 2 avocados, in halves, pitted
  • 10 asparagus, cut the fibrous part
  • 2 lemons, in halves
  • 10 bacon, in thick slices
  • salt
  • pepper
  • 1 garlic, grilled, for the dressing
  • 2 tablespoons lemon juice, grilled, for the dressing
  • 1 teaspoon cilantro seeds, grilled, for the dressing
  • 1/2 teaspoons allspice berry, grilled, for the dressing
  • 1 teaspoon salt, for the dressing
  • 1/2 cups plain yogurt, sugar-free, for the dressing
  • 3 tablespoons olive oil, for the dressing
  • 1/4 cups blue cheese, crumbled
  • 1/3 cups Parmesan cheese, in slabs
  • 1/3 cups goat cheese, crumbled
  • cilantro, coarsely chopped

  • Heat a grill over high heat, brush with clarified butter and grill the Eva® trio lettuce (5 seconds per side), red onion (1 minute), cherry tomatoes (15 seconds), avocado (15 seconds), asparagus (1.5 minutes), yellow lemon (1 minute), and bacon (3-5 minutes). The time depends on the texture of each vegetable; the more delicate it is, the less time it should spend on the grill, which is why it is important to have the grill very hot. Set aside the vegetables once grilled.
  • For the dressing, using a molcajete or mortar, grind the garlic, coriander seeds, allspice, lemon juice, and salt; then mix with natural yogurt and lighten with a bit of olive oil.
  • Prepare your grill, coat the grilled vegetables with the dressing and evenly distribute the cheeses, sprinkle with cilantro.
