  • 3 cups corn masa flour
  • 1/2 cups baking powder
  • salt

  • vegetable oil
  • 1/4 onions
  • 5 tomatoes, roasted
  • 1 clove garlic, roasted
  • 2 tablespoons chipotle chile, in adobo
  • 1 cup chicken broth
  • salt
  • 2 tablespoons vegetable oil
  • 1 cup onion, in thin strips
  • 1 cup pressed pork rinds, stewed
  • 2 cups chicken breast, cooked and shredded
  • sour cream
  • queso fresco, shredded

  • Mix the corn flour, wheat flour, baking powder, and salt in a bowl, then gradually pour in the chicken broth until you obtain a smooth dough that does not crack.Divide the dough into portions, place in a press with plastic, and flatten. Fry the infladitas one by one in a pot with enough oil over medium-high heat. Remove from the oil, place on a plate with absorbent paper, and set aside.
  • Blend the onion, tomato, garlic, chipotle pepper, chicken broth, and salt. Set aside.
  • Heat the oil in a skillet over medium heat, add the onion and pressed chicharrón and cook for 5 minutes. Add the chicken and the broth and cook for 10 more minutes.
  • Cut the gorditas in half, fill with the tinga and garnish with cream and cheese. Serve with Sidral Mundet® Apple flavor.
