Tuna Green Enchiladas

  • Place the tomatoes and previously washed chiles in a pot with water and cook until soft.
  • Blend the cooked tomatoes with the chiles, 1/4 onion, garlic, cilantro, and salt to taste.
  • Fry the tortillas in the oil.
  • Cook the sauce until it changes color and adjust the seasoning.
  • Finely chop the remaining onion and set aside.
  • Dip the tortillas into the hot sauce one by one and place them on a plate.
  • Add the tuna in the middle and fold until you have 3 enchiladas.
  • Pour more sauce on top, add onion, cream, and cheese. Serve.
