500 grams tomatillo
1/2 onions
serrano chile
1 clove garlic
1 sprig fresh cilantro
1/2 liters water
3 cans canned tuna in water
6 tortillas
200 grams panela cheese, shredded
200 milliliters sour cream
1/4 cups vegetable oil
salt

Place the tomatoes and previously washed chiles in a pot with water and cook until soft.
Blend the cooked tomatoes with the chiles, 1/4 onion, garlic, cilantro, and salt to taste.
Fry the tortillas in the oil.
Cook the sauce until it changes color and adjust the seasoning.
Finely chop the remaining onion and set aside.
Dip the tortillas into the hot sauce one by one and place them on a plate.
Add the tuna in the middle and fold until you have 3 enchiladas.
Pour more sauce on top, add onion, cream, and cheese. Serve.
