  • 2 cups tuna, without liquid
  • 1/2 cups olives, in slices

  • 1/4 cups almonds, fileted

  • 3 mixed bell peppers
  • 1/2 cups breadcrumbs
  • 3 tablespoons parsley, finely chopped
  • white rice, for accompaniment

  • Blend the tomato, onion, garlic clove, cinnamon stick, pepper, salt, and broth until you obtain a well-integrated and slightly thick sauce. Set aside.
  • Sauté the onion and garlic in a pan with a little oil for 2 minutes. Add the tuna, the previously prepared sauce, and salt, and let it cook for 5 minutes or until the liquid reduces. Finally, add the olives, capers, almonds, and parsley, mix, and cook for 3 more minutes. Let cool.
  • Cut the peppers in half, remove the seeds, and fill with tuna. Sprinkle with breadcrumbs and parsley and bake for 10 minutes.
  • Serve the tuna stuffed peppers and accompany with white rice.
