  • 3 green onions
  • 1/2 ginger, peeled, in thick slices
  • 1 carrot, in slices
  • 1/2 cloves garlic
  • 1 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 turkey breast, smoked
  • salt and pepper
  • 2 eggs, Cooked and peeled
  • 1/2 cups soy sauce
  • 1/2 cups water
  • 1 teaspoon sugar
  • water
  • 1 package egg noodle
  • green onion, only the green part, very thinly sliced
  • nori, in medium cubes
  • salsa macha, for garnish
  • lime, for garnish

  • Heat a pot with enough water and add the onion, ginger, carrot, garlic, soy sauce, rice vinegar, sugar, turkey breast, salt, and pepper. Cook for 20 minutes and set aside. Then, remove the turkey breast, slice it, and keep it warm.
  • Place the cooked eggs, soy sauce, water, and sugar in a bowl and let sit for 12 hours. Set aside.
  • Cook the noodles in a pot with enough boiling water for 10 minutes. Drain and set aside.
  • Serve some of the noodles in a bowl, pour a bit of the turkey cooking broth over them, and place the halved egg, green onion, and seaweed on top. Accompany the turkey ramen with macha sauce and lime juice.
