Vegetarian Quiche with Cherry Tomato

  • 1 1/2 cups flour, for the crust
  • 1/2 cups butter, for the crust
  • 1 pinch salt
  • 1 egg, for the crust
  • 1 Nutrioli Spray®
  • 1/2 red onions, sliced
  • 1 clove garlic, finely chopped
  • 4 cups spinach
  • 1/4 cups peanuts
  • 150 grams goat cheese
  • 1 pinch salt
  • 1 pinch pepper
  • 1/2 cups cow's milk, for the filling
  • 4 eggs, for the filling
  • 1 tablespoon flour, for the filling
  • 1 teaspoon salt, for the filling
  • 1 cup cherry tomato, halved
  • basil, for decoration

  • Preheat the oven to 180°C and grease a quiche dish with Nutrioli Spray® and flour.
  • In a food processor, process all the ingredients for the crust until a smooth dough forms. Roll it out with a rolling pin and line the mold. Prick with a fork and refrigerate.
  • For the filling, heat a little Nutrioli Spray® in a skillet and cook the onion and garlic. Add the spinach and cook for 5 minutes. Add the peanuts and cheese, season with salt and pepper. Set aside.
  • In a bowl, mix the milk with the egg, flour, and salt. Add the sautéed spinach and mix.
  • Pour all the filling into the crust and place the cherry tomatoes on top. Cover with aluminum foil and bake for about 40 minutes to an hour or until cooked through. Decorate with basil.
