Bean Tamales with Goat Cheese

  • salt, to taste (filling)
  • pepper, to taste (filling)

  • Beat the dough with the lard and salt until smooth. Set aside.
  • Cut the banana leaves into approximately 20-centimeter pieces, roast them until soft, spread over the reserved dough, and in the center distribute the filling ingredients. A bit of beans, goat cheese, a bit of chipotle, and adjust salt to taste.
  • Fold into a wallet shape and place in a steamer. Cook for one hour or until the dough easily separates from the leaves.
