Blend the tomato, chipotle chili, garlic, onion, and water. Set aside.
In a saucepan over medium heat, heat the oil, add the sliced onion and cook for 5 minutes or until translucent. Add the carrot and cook for one minute.
Pour the salsa, let it come to a boil, and cook for 15 minutes. Season with salt and pepper.
For the puree, in a food processor, process the almonds and water, season with salt and pepper.
