Carrot Tinga Toasts

Tinga is one of the favorite dishes of many; prepare this healthy option and restore your body with the wonderful properties of carrots since they are not only a high-fiber food but also an excellent antioxidant.

  • 5 tomatoes, for the salsa
  • 1 tablespoon chipotle chile, for the salsa
  • 1 clove garlic, for the salsa
  • 1/8 onions, for the salsa
  • 1/4 cups water, for the salsa
  • 2 tablespoons vegetable oil
  • 1 onion, cut into strips
  • 6 carrots, grated
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup almonds, soaked, for the puree
  • 3/4 cups water, for the puree
  • 1 pinch salt, for the puree
  • 1 pinch pepper, for the puree
  • 10 tostadas
  • 1 cup lettuce, Chopped, for serving
  • 1/4 red onions, Thinly sliced, for garnish
  • 1 avocado, for garnish

  • Blend the tomato, chipotle chili, garlic, onion, and water. Set aside.
  • In a saucepan over medium heat, heat the oil, add the sliced onion and cook for 5 minutes or until translucent. Add the carrot and cook for one minute.
  • Pour the salsa, let it come to a boil, and cook for 15 minutes. Season with salt and pepper.
  • For the puree, in a food processor, process the almonds and water, season with salt and pepper.
  • Assemble the toasts by spreading a bit of almond puree, tinga, lettuce, red onion, and avocado. Serve with salsa.
