Eggplant Meatballs

Replace the meat and make a healthy version of traditional recipes. These meatballs are packed with plant protein, are delicious, and won’t make you gain weight. Perfect for the diet!

  • 1 eggplant, large
  • 1/2 onions
  • 1 clove garlic
  • 1 bunch parsley
  • 1 cup beans, cooked
  • tomato sauces
  • 1 cup panko
  • olive oil
  • salt, and pepper

  • Chop the onion into coarse pieces.
  • Sauté the garlic and onion in a little oil.
  • Cut the eggplant into large cubes. Sauté it in another pan and add one or two tablespoons of water. Cook covered until soft.
  • Place the cooked eggplant, sautéed onion and garlic, a few sprigs of parsley, and the cooked beans into a food processor.
  • Pulse a few times to achieve the right consistency with small pieces and not a puree. Add salt, pepper, and panko; you should obtain a firm but moldable dough.
  • Form small balls with your hands and arrange them on a baking sheet lined with parchment paper.
  • Bake for 35 minutes at 180°C.
  • Serve with tomato sauce.
