Cut the eggplant into large cubes. Sauté it in another pan and add one or two tablespoons of water. Cook covered until soft.
Place the cooked eggplant, sautéed onion and garlic, a few sprigs of parsley, and the cooked beans into a food processor.
Pulse a few times to achieve the right consistency with small pieces and not a puree. Add salt, pepper, and panko; you should obtain a firm but moldable dough.
Form small balls with your hands and arrange them on a baking sheet lined with parchment paper.
Bake for 35 minutes at 180°C.
Serve with tomato sauce.
