Garlic Mushroom Tostadas

A delicious breakfast with plenty of plant-based protein. Prepare the mushrooms the night before and store them in a container. If you're taking it to work, keep the lettuce, tostadas, and chili powder separate.

  • 2 cups white button mushrooms
  • 1 clove garlic
  • 1/4 onions
  • 1 dried árbol chile
  • 2 slices turkey deli ham
  • 2 baby nopales
  • 2 corn tostadas, baked
  • 1/4 cups panela cheese, grated
  • 1 teaspoon olive oil
  • chile powder, to taste
  • sea ​​salt, to taste

  • Slice the mushroom. Finely chop the garlic and onion. Cut the nopal into sticks. Cut the dried chili.
  • In a pan, add the oil; once hot, add the onion and garlic, making sure they don’t burn.
  • When the onion is transparent, add the chili, mushroom, nopal, and ham. Season and cook for 5 minutes.
  • Assemble on the tostadas, placing a bed of lettuce and on top of that, the preparation you cooked in the pan. Sprinkle a bit of chili powder.
