Place the corn tortilla on a flat surface and add the necessary amount of carrot and Oaxaca cheese, roll it up and set aside. Repeat until all tortillas are used.
Heat the oil in a skillet over high heat, wait until it is very hot, and then fry the carrot tacos. Remove them once they are golden brown, drain, and remove excess fat with the help of a paper towel. Set aside.
Serve the golden carrot tacos on a flat plate, accompany by spreading sour cream, sprinkling fresh cheese, adding lettuce, and finally placing tomato slices on top, done!
