Grilled Vegetable Sopes

  • cooking spray, or avocado
  • 1 zucchini, sliced
  • 2 cuaresmeño chiles, sliced
  • 1 cup button mushrooms, sliced
  • oregano
  • 1 teaspoon garlic powder
  • pinches salt
  • pepper
  • 4 nopales
  • 1 1/2 cups refried beans, or just mashed
  • 1 red bell pepper, cut into julienne
  • 1/4 onions, cut into julienne
  • cherry tomato, for decoration
  • oregano

  • Heat a grill and spray oil on it, then place the mushrooms, zucchini, and peppers; season with oregano, garlic powder, salt, and pepper; cook for 5 minutes. Remove and set aside.
  • Grill the nopales for 5 minutes; remove and set aside.
  • To assemble the sopes, place the nopales as a base, spread refried beans and the grilled vegetables. Decorate with cherry tomatoes, onion, pepper, and a little oregano.
