  • 12 wholemeal breads, Oroweat® 12 Grains
  • 1 carrot
  • 1/2 beets
  • 1 zucchini
  • 1/4 Romaine lettuce
  • 1/2 onions
  • 1 cup sprouts
  • 1 cup fresh cilantro, (for the dressing)
  • 1/4 red cabbages, (for the dressing)
  • 1 cup Greek yogurt, flavorless (for the dressing)
  • 4 tablespoons mustard, (for the dressing)
  • 2 tablespoons honey
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper

  • Using a potato peeler, remove the skin from the carrot and grate it. Repeat this process with the beet. Set aside.
  • Grate the zucchini with a potato peeler. Set aside.
  • Slice the lettuce, cabbage, and onion very thinly. Set aside.
  • In a bowl, combine the chopped vegetables, sprouts, chickpeas, and cilantro.
  • For the dressing: mix yogurt, red cabbage, mustard, honey, oregano, sea salt, and pepper. Pour this dressing over the vegetables and mix very well.
  • Place a generous amount of the mixture on a sandwich and close with another slice of bread. Serve.
