Mushroom Tinga Toasts

  • 2 tomatoes, in half
  • 1 dried chipotle chile, seedless, veinless
  • 1 clove garlic
  • 1/4 onions
  • 1/2 cups water
  • salt
  • pepper
  • 1 tablespoon olive oil
  • 1 cup onion, in strips
  • 1 cup mushrooms, organic
  • 4 Saníssimo® Baked Toasts
  • 1/2 cups pinto beans, fat-free
  • 4 tablespoons sour cream, reduced fat; one tablespoon per toast
  • 4 tablespoons panela cheese, reduced fat; one tablespoon per toast

  • Blend the tomato, chipotle pepper, garlic, onion, water, salt, and pepper. Set aside.
  • Heat the olive oil in a skillet over medium heat. Add the onion and cook for 5 minutes or until it becomes translucent. Add the mushrooms and cook for 2 more minutes.
  • Pour in what you blended earlier, and if you find it's lacking liquid, you can add water or chicken broth. Cook until it boils, adjust the seasoning, and remove from heat.
  • Spread a Saníssimo® Baked Toast with beans, add the mushroom tinga, and top with cream and cheese.
