Paneer Ceviche

  • Mix the lemon juice, olive oil, oregano, vinegar, salt, and pepper in a bowl until all ingredients are combined. Set aside.
  • Add the paneer cheese, cucumber, tomatillo, and red onion to a bowl. Then, drizzle with the vinaigrette and refrigerate the ceviche for 1 hour.
  • Serve the paneer ceviche in a bowl, garnish with cilantro leaves and red onion, and enjoy with baked tostadas!
