1 cup chickpeas, cooked
2 tablespoons chia seeds, soaked in water
1/2 cups quinoa, boiled
1/2 cups carrot, grated and squeezed
2 tablespoons sunflower seeds
1/2 cups breadcrumbs
3 pinches salt
1 pinch pepper
1/2 cups coconut oil
1 bell pepper, cut into sheets
1 pumpkin, sliced thin
2 pinches salt
1 pinch pepper
1 avocado
1 tablespoon lime juice
2 pinches salt
3 burger buns, vegan

In a food processor, process the chickpeas for 3 minutes until you get a puree.
In a bowl, mix the chickpea puree with chia, quinoa, carrot, sunflower seeds, breadcrumbs, salt, and pepper.
Shape patties with the chickpea mixture and fry in a pan over low heat with a little coconut oil until cooked. Drain on paper towels and set aside.
In a bowl, mix the bell pepper and zucchini, add two tablespoons of coconut oil; season and set aside.
In a bowl, mash the avocado with the lemon juice and salt using a fork until you get a puree. Set aside.
Heat the vegan burger buns, serve the small burgers in the buns with the bell pepper and zucchini, add the avocado puree and serve. Enjoy.
