Soy Meat Tacos al Pastor

If you like tacos al pastor, these soy meat tacos give them a run for their money without a doubt. Delicious marinated soy meat with traditional al pastor sauce, accompanied by pineapple, cilantro, and onion.

  • 2 cups soy meat, texturized
  • 5 guajillo chiles, for the marinade
  • 1/2 cups achiote paste, for the marinade
  • 1/4 cups vinegar, for the marinade
  • 3 tablespoons orange juice, sour, for the marinade
  • 1 teaspoon garlic powder, for the marinade
  • 1 teaspoon onion powder, for the marinade
  • 1 pepper, fatty, for the marinade
  • 1 pinch oregano, for the marinade
  • 3 pinches salt, for the marinade
  • 2 tablespoons vegetable oil
  • 12 corn tortillas
  • 1 cup pineapple, in slices, for accompaniment
  • 6 tablespoons onion, finely chopped, for garnish
  • 6 tablespoons fresh cilantro, finely chopped, for garnish
  • 1/2 cups green salsa

  • In a pot of boiling water, rehydrate the soy for 20 minutes, removing excess foam. Drain and rinse with water.
  • Blend all the marinade ingredients and mix with the meat, let rest for 20 minutes.
  • In a skillet over medium heat, heat the oil and fry the meat until golden brown. Set aside.
  • Heat the corn tortillas on a griddle and serve with the meat, accompanied by pineapple, onion, cilantro, and sauce.
