Spaghetti with Peanut and Sesame Sauce

  • 1 tablespoon salt
  • 1 package spaghetti, whole grain (500 g)
  • 1 cup coconut milk, for the sauce
  • 1/2 cups peanuts, toasted, for the sauce
  • 2 tablespoons sesame seeds, toasted, for the sauce
  • 1 teaspoon curry powder, for the sauce
  • 1 pinch salt, for the sauce
  • 1 pinch pepper, for the sauce
  • 3 tablespoons coconut oil
  • 1 clove garlic, finely chopped
  • 1/4 cups peanuts
  • 3 teaspoons ginger, finely chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon chives, finely chopped, for garnish
  • 10 leaves fresh cilantro, fresh, for garnish

  • Cook the spaghetti in a pot of boiling water with salt, according to the package instructions. Drain and set aside.
  • Blend the coconut milk, peanuts, sesame seeds, curry powder, salt, and pepper. Set aside.
  • Heat a medium skillet over medium heat, add the coconut oil, garlic, peanuts, and ginger.
  • Incorporate the spaghetti and the sauce and cook for 5 minutes to reduce the sauce a bit. Season, remove from heat.
  • Serve the spaghetti with chopped green onions and fresh cilantro leaves. Enjoy!
