Spinach and Cheese Croquettes

For this Lenten season, don't forget to treat your family; prepare these spinach and cheese croquettes. They contain a mix of cream cheese, Manchego, and Oaxaca cheese, with the perfect touch provided by Bimbo ® Crunchy Coating. You will love them!

  • 2 tablespoons vegetable oil
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon garlic
  • 3 cups spinach
  • 190 grams cream cheese, for the croquettes
  • 1/2 cups Manchego cheese, grated
  • 1/2 cups Oaxaca cheese, grated
  • salt and pepper
  • flour
  • 2 eggs, beaten
  • 1 cup crispy breading machine Bimbo ®
  • 2 cups vegetable oil, for frying
  • 1 cup mayonnaise, for the dressing
  • 1 tablespoon onion, finely chopped, for the dressing
  • 2 tablespoons pickles, finely chopped, for the dressing
  • 1 tablespoon fresh cilantro, for the dressing

  • Heat the oil in a pan and cook the onion with the garlic and spinach until the liquid reduces. Season with salt and pepper and remove. Let it cool.
  • In a bowl, cream the cream cheese and add the spinach, Manchego cheese, and Oaxaca cheese. Season.
  • With the help of your hands, form croquettes and coat them by passing through flour, egg, and Bimbo ® Crunchy Coating.
  • In a small pot over medium heat, cook the croquettes in a pan over medium heat until they are golden brown. Remove and set aside.
  • For the dressing, mix the mayonnaise, onion, pickles, cilantro, season with salt and pepper, and enjoy with the croquettes.
