Spinach and Cheese Croquettes

2 tablespoons onion, finely chopped
1 tablespoon garlic
3 cups spinach
190 grams cream cheese, for the croquettes
1/2 cups Manchego cheese, grated
1/2 cups Oaxaca cheese, grated
salt and pepper
flour
2 eggs, beaten
1 cup crispy breading machine Bimbo ®
2 cups vegetable oil, for frying
1 cup mayonnaise, for the dressing
1 tablespoon onion, finely chopped, for the dressing
2 tablespoons pickles, finely chopped, for the dressing
1 tablespoon fresh cilantro, for the dressing

Heat the oil in a pan and cook the onion with the garlic and spinach until the liquid reduces. Season with salt and pepper and remove. Let it cool.
In a bowl, cream the cream cheese and add the spinach, Manchego cheese, and Oaxaca cheese. Season.
With the help of your hands, form croquettes and coat them by passing through flour, egg, and Bimbo ® Crunchy Coating.
In a small pot over medium heat, cook the croquettes in a pan over medium heat until they are golden brown. Remove and set aside.
For the dressing, mix the mayonnaise, onion, pickles, cilantro, season with salt and pepper, and enjoy with the croquettes.
