Peel the potatoes, wash them, cut them in half, and slice them into thin pieces. Chop the onion into very small pieces.
In a pan, add one or two tablespoons of oil, and when it is hot, add the potatoes, onion, salt to taste, 250 milliliters of water (or one cup), and turn the heat up to maximum. When the water is boiling, lower the heat and cover the pan with a lid. Leave the potatoes until they soften.
Stir the mixture from time to time to prevent it from sticking.
In a bowl, add 16 tablespoons of flour and water, whisk until you obtain a homogeneous mixture, add a little salt, the cooked potatoes, and the onion. Mix.
In a pan, pour one or two tablespoons of oil, and when it is hot, pour in the previous mixture and let it cook over medium heat for about 5 minutes. Place a plate over the omelette and flip it to cook the other side for another 5 minutes. Turn it as needed to ensure the omelette is cooked inside and out.
