Vegetarian Picadillo Tostadas

  • 3 tablespoons vegetable oil
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup carrot
  • 1 cup potato
  • 1 cup peas
  • 2 cups lentils, cooked
  • 1 cup water
  • 1 cup tomato, chopped
  • 1 teaspoon cumin powder
  • 1/2 cups tomato purée
  • salt
  • pepper
  • tostadas
  • cheese, for garnish
  • sour cream, for garnish

  • Heat a skillet over medium heat and add vegetable oil; fry the onion and garlic, add the carrot, potato, and peas. Season and add water, cook for 10 minutes and wait for it to evaporate.
  • Add the lentils and tomato, season with cumin, salt, and pepper; cook for 3 minutes and remove from heat.
  • Assemble the tostadas with the picadillo, cream, and cheese. Enjoy.
